Now in a bowl add all the chopped veggies + your choice of protein + hung curd/yogurt + salt and pepper as per taste + a few drops of chili oil. Mix all these together and use this as the filling to layer your toast generously. If you like cheese and want to have some, layer the open toast with cheese and let it melt by placing it on the pan for a few minutes, with the lid closed.

9. Microgreens Buttermilk

We all know how buttermilk can be a great cooler during summers. In case you don’t know how to make buttermilk, here is a quick recipe. Add curd and cold water to a blender and whisk until a smooth and slightly frothy blend. To that add roasted cumin powder, salt to taste, chopped curry leaves, grated ginger, and coriander. Let it chill before serving.
While serving, add beetroot and basil microgreens with a light sprinkle of roasted cumin powder. This is especially refreshing during summer.
10. Microgreens Millet Bowl

So slightly roast foxtail and ground nuts and keep them aside. You can replace the foxtail nuts with cooked quinoa as well.
Now chop veggies of your choice, preferably onions, carrots, and cucumbers; you can also add some boiled corn and peas. For the dressing, blend mint leaves, coriander, yogurt, amla, green chilies, a small piece of ginger, and a few drops of lime juice together. Now mix all your ingredients, add your dressing, and top it off with kale, wheatgrass, and fenugreek microgreens to create a nutrient-dense, healthy, and extremely filling and tasty meal.
